Ginger-Mustard Chicken Sautefrom ??? submitted by Linda Rosselot serves 2 prep time 10 minutes, cook time 15 minutes
Sauteed chicken breast 3/4 cup chicken broth 2 tsp minced fresh ginger 2 tsp Dijon mustard 4 scallions, minced salt and pepper to taste
Saute chicken.
Pour broth into skillet and increase heat to medium-high. Deglaze skillet by heating broth to boiling and scraping loose browned bits on bottom of pan. Add ginger and cook, stirring frequently, 2 minutes. Stir in mustards and scallions. Season with salt and fresh ground pepper.
Spoon sauce over chicken. Serve hot. Nutritional Information (per serving): 197 calories 21 g protein 9 g fat 4 g carbohydrates 664 mg sodium
